I always have some cut up lettuce in the fridge to pull together a quick salad or sandwich. I recommend using romaine lettuce for this pinwheel recipe.
I used a thicker slice of turkey meat to get some more protein in there. I also used provolone cheese for my pinwheel but you can use what cheese you desire. For the condiment, I use some delicious avocado mayonnaise. Sunflower mayonnaise is also one of my favorites.
Once I lay out the spinach tortilla and put the ingredients in, then I carefully roll the tortilla as to not tear it. Once it’s nicely rolled, I use toothpicks to hold everything in place. Then using a serrated knife I cut my roll into thirds or quarters. I leave the toothpick in so it holds everything together until I am ready to eat.
For meal prep purposes, you can make them in the morning and have them fresh for lunch. You can also make them the night before for the next day. Anything longer than 24 hours and your pinwheel might become a little soggy.
Finally, you can add some some extra mayonnaise on the side or add a healthy snack such as carrots with some ranch dressing.
