First I boiled some water to place my frozen green beans in. Once the water was at a rolling boil, I placed some green beans into to cook. I let them simmer for a few minutes until they were somewhat al dente and not all the way cooked. I then set those aside.

While the green beans were simmering, I started to fry some diced bacon. You can also bake the bacon if you’re short on space, but I especially love to fry them for this recipe.

Once the bacon was nice and crispy, I pulled them out of the pan to cool. I then poured out most of the bacon grease of the pan. I left some of the grease in the pan, and decided to cook up some onions and garlic in the leftover bacon grease.

Once those were cooked, I then sautéed the green beans in it so they can finish cooking. Then when the green beans were done, I threw the bacon crumbles back in and seasoned with salt and pepper to taste.

For this recipe, I wanted to create a simple meal that I can cook quickly while still being delicious. I seasoned up some chicken breasts and then threw it on the grill.

You can also pan fry the chicken if you don’t have a grill. Chicken breasts can easily be overcooked and become cry, so you’ll want to keep an eye on them.

Once the chicken was done, I combined it with my green beans and bacon side and my meal prep meal was finished.

Green Beans With Bacon

  • 1 1/2 lb green beans trimmed
  • 4 slices bacon diced
  • 1 clove garlic minced
  • 1/3 cup onion diced

Grilled Chicken

  • 4 chicken breasts
  • 1/2 tsp pink salt
  • 1/4 tsp pepper
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • spray oil for grill


Green Beans With Bacon

  • Place the trimmed green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and run under cold water to stop cooking. Set aside.
  • Heat a large skillet or pan over medium heat; add the diced bacon. Fry bacon until crispy. Set aside bacon and pour out most of bacon grease but reserve at least 1 tbsp of bacon grease to saute.
  • Cook diced onion and minced garlic in the bacon grease. Then add the green beans and saute until fully cooked, and then add cooked bacon back in.

Grilled Chicken

  • Preheat grill to medium high heat and spray grill with spray oil
  • Mix garlic powder, cumin, smoked paprika, pink salt, pepper, and olive oil until well combined. Place seasoning rub on both sides of chicken breasts.
  • Place chicken on grill and grill each side for 5-8 minutes depending on thickness, until fully cooked.
